Rusty's Rib Rub

Let roast sit out to room temperature 2-4 hours (drape with a towel, modesty and all). Preheat oven to 500*. Put roast in a shallow roasting pan, fat side up. Rub Rusty's Rodeo Rub lightly into the fat to cover. Put the roast in the oven and cook according to weight at 5 minutes per pound:

4.5 to 5 lbs = 25 to 30 minutes
8 to 9 lbs =40 to 45 minutes
11 to 12 lbs = 55 to 60 minutes

When roasting time is over, turn off the oven.
DO NOT OPEN THE OVEN DOOR UNTIL THE OVEN IS LUKE WARM, ABOUT TWO HOURS.
